This creamy broccoli pasta is a warm and comforting dish that combines al dente pasta with vibrant broccoli in a rich sauce. Perfect for a quick weeknight meal, it’s both delicious and nutritious.

- 300 g pasta
- 500 g broccoli (cut into small florets)
- 30 g vegan butter
- 25 g flour
- 200 ml unsweetened oat milk (or other plant milk)
- 150 ml oat cuisine (or plant-based cream alternative)
- 2 tsp vegetable broth powder
- 1 tbsp vegan parmesan
- 50 g pine nuts (toasted)

Instructions
- Set a large pot of water to boil. Add a generous amount of salt and cook the pasta according to package instructions (about 8-10 minutes) until al dente.
- While the pasta cooks, heat a non-stick pan over medium heat. Add the pine nuts and toast them without oil for about 3-5 minutes until golden brown, stirring constantly to prevent burning. Remove from the pan and set aside.
- Wash the broccoli thoroughly and cut it into small florets. In a separate pot, bring lightly salted water to a boil and cook the broccoli for about 10 minutes until soft but still bright green. Check the texture with a fork.
- In another pot, melt the vegan butter over medium heat. Add the flour and stir for about 1-2 minutes until lightly golden to help bind the sauce.
- Slowly pour in the oat milk and oat cuisine while stirring continuously to avoid lumps. Bring the mixture to a boil and continue stirring until the sauce thickens (about 3-5 minutes).
- Season the sauce with vegetable broth powder, salt, and vegan parmesan. Stir well and let it briefly come to a boil to meld the flavors.
- Once the broccoli is cooked, set aside about one-third of the florets for decoration. Roughly mash the remaining broccoli with a fork or potato masher and mix it into the sauce.
- When the pasta is done, drain it and add it directly to the creamy broccoli sauce. Mix thoroughly until the pasta is evenly coated with the sauce.
- Serve the creamy pasta on plates, garnished with the reserved broccoli florets and toasted pine nuts. Serve immediately to keep it warm and creamy.
