Description

Ingredients

  • 500 g potatoes (about 5 medium-sized)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons sweet paprika powder
  • 1/2 teaspoon hot paprika powder
  • Salt (to taste)
  • Pepper (to taste)
  • 2 handfuls mixed salad
  • 10 cherry tomatoes
  • 1 avocado
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 clove garlic (pressed or finely chopped)
  • 1 teaspoon honey
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Peel the potatoes, cut each into quarters, and chop into uniform cubes. Mix with olive oil, sweet paprika, and hot paprika. Spread on a baking sheet and bake at 200°C for 25 minutes, turning halfway through.
  2. Wash and dry the mixed salad. Halve the cherry tomatoes. Cut the avocado and slice it into thin strips just before serving.
  3. In a small bowl, mix lemon juice, olive oil, garlic, and honey until well combined. Adjust seasoning as needed.
  4. Remove potatoes from the oven, season with salt. In a large bowl, layer salad, tomatoes, avocado, and top with crispy potatoes. Drizzle with dressing before serving.
